From our kitchen you can find: As hors-d’oeuvre we've got traditional crostini and Tuscan cold cuts (salami, ham, finocchiona…), marinated anchovies and lots of fried appetizers as sage leafs with anchovies, polenta, cheese and courgettes and onion beignets. First courses are prepared with fresh pasta and sauces like rabbit, wild boar, duck, pigeon, chicken with vegetables and dried porcini mushrooms, ossobuco, zucchini flowers, artichokes, wild asparagus, truffles, porcini, ewe cheeses, or lasagnas with different sauces, crepes Florentine style, potatoes tortelloni with sage, sausage and saffron, or ravioli filled with spinach and ricotta cheese seasoned with nuts sauce. As Second courses we cook filled rabbit farmer’s style, Peposo dell’Impruneta (beef stew with Chianti wine and pepper), roast guinea-fowl with lemon and fresh thyme, roast suckling pork or pigeons or leg of lamb, trips, round filled zucchini with meat and cheese, baked mushrooms with bacon and mint, pork carrée with apples and prunes, fried or stewed stockfish with leeks, roast pork liver with Vinsanto wine, stewed green tomatoes with grapes and, of course, unfailing fried meat: chicken, rabbit, lamb, lamb’s entreils… From the grill on the real fire we have lamb chops, cinta pork cutlet, Florentine beefsteak, beef filet or duck breast. Side dishes and season vegetables available are roast, fried or grilled vegetables, real French fries (cut with hands, not frozen), cannellini white beans Florentine style, porcini mushrooms, spinach, chicory, balk cabbage or swiss chard, simply boiled or sautée, thistles en-sauce, gratin tomatoes, stewed peppers and French green beans. All our sweets are homemade, from tarts with different jams to chocolate muffins with almonds, from tiramisu to panna cotta, yoghurt cakes, spelt and canella cakes, chocolate and pears strudel or soft biscuits with pine seeds and raisin. In our cave wines are from Tuscany, mainly from local farms: sangiovese wines are prevalent, both pure and joint with merlot, cabernet-sauvignon and colorino grapes.
